"YUMMMM!! I used chicken breast instead of thighs, I actually liked that it fell apart into somewhat shredded texture. Everyone loved it. It was light, yet filling. However, next time, I will probably double it. Didn't really get 6 servings out of it. And a little more flavor to the chicken wouldn't hurt, but the fall apart texture of the chicken went well with the flavorful rice getting spoonfuls of chicken and rice!"
