"Great, easy versatile recipe! Liked it the way it's written, but love it using diced ortega chilies, jack cheese and finely shredded spinache instead of the mushrooms and cheddar cheese. Served this with some salsa spooned over the top of each mini-pie. "

"Pretty good! I did leave out the salt because the bacon is salty enough and I added some chopped spinach with the veggies. And I think next time I'll leave out the bell peppers and add diced ortega peppers; use jack cheese instead of cheddar; put 1/2 of the bacon with the layer of veggies and serve with salsa. Would probably be good also with sausage crumbles instead of the bacon. "

"Delicious! My whole family enjoyed this--will definitely make again. I did cut down the fat and sodium a bit by using non-fat feta cheese and no salt added tomato sauce. I upped the nutrition a bit by adding one cup each of finely diced carrots and celery and 1/2 cup of finely diced bell pepper. "

"My family loves chicken fixed this way. I grate the cucumber and use Yoplait non-fat Greek yogurt (plain) for a thicker sauce. Also, I spinkle a bit of lemon-pepper and squeeze a bit of lemon juice on the chicken. The sauce will also work well with other meats. "

Sausage and Egg Breakfast Pizza

Quick and easy to serve a group. I sometimes use whole wheat pizza dough or make the pizza crust out of Heart Smart Bisquick (1 1/2 c. mix + 1/3 c. hot water). We like to add finely chopped spinach and a little nutmeg to the eggs and sausage, with chopped fresh tomatoes and non-fat feta cheese sprinkled on top of the pizza before it goes in the oven. Ups the nutritional values quite a bit and get extra veggies in for the day. Sometimes add mushrooms also.

Mississippi Mud Bars

Although this isn't too bad in calories for a dessert/snack item, it is pretty high in "fat" calories. I used the low-fat "heart healthy" Bisquick, low-fat sour cream, only 1/2 of the butter, but added one small carton (6 oz.) of fat-free vanilla yogurt. Also, added 1/2 c. chopped pecans to the batter so it is more like my recipe for Mississippi Mud cake. Also, have at times made this with the jarred marshmallow "syrup"--@ 1/3 jar is enough. Seems a little less "sugary" to me but I don't know why.
