Lemon Buttercream Frosting
This frosting was life-changing! Man! You thought buttercream was good by itself? Forget that. That was your past life. Your life before lemon buttercream. Nothing on your future path will ever be the same after you try this frosting. Protips: We used zest from 4 lemons total for the Lemon Cupcake recipe with this frosting. Don't start making the frosting until the cupcakes come out of the oven since they have to cool for 30 minutes, and you don't want this to get crusty. Recipe as written makes 7 metric tons of frosting, good if you use a pastry bag to do fancy frosting. Halve the recipe if you're doing just a thin layer of spread, which is just great for the desired level of sweetness. We topped with red granulated sugar for a pretty effect.

These cupcakes were EPIC. These cupcakes were life-changing! They were also, comparitively, a lot of work for we who don't bake too often. We joked that they'd better be an improvement over the box cupcakes, which we used to think were pretty good... USED TO, that is, until these little lemon angels that dance lightly on lemon-buttercream feet descended from heaven to melt into our mixing bowls and become these cupcakes! We're ruined for box cupcakes forever. Try the lemon-buttercream frosting with them since you're already zesting the lemons anyway. We used about 4 lemons for zest total for both cupcakes and the frosting. Ours were perfect when baked for 20 minutes in an oven totally up to temperature at high altitude.
