Mix-Easy Oatmeal-Raisin Cookies
I don't bake. I don't understand the whole flour thing. Self-rising? Baking soda? Baking powder? Shortening? What is that, actually? Mine is a galley kitchen and there's simply no space anyway to roll out dough or to toss a pizza or to marshall all those ingredients needed to bake even the simplest cakes. When I want cake, I go to a bakery. That's how it all started: I had some some raisin oatmeal bars from a bakery and I had a yen for more. Stupid bakery was closed. What to do? Why, fire up the ol' internet, of course. The search on "oatmeal raisin" brought me straight to BettyCrocker. I found the absolutely EASIEST recipe ever written for any food dish. I cannot BELIEVE the result. You won't either. Simple! Fast! Moist but chewy, not crumbly. I made oatmeal raisin bars, which meant I divided and spread the glob into two separate 8" square baking pans. When they say bake for 14 minutes, they really mean it. The first time I overbaked at 30 minutes, and they kinda scorched on the bottom. Were still good, though. The second time I made them, I got it just right at 20 minutes. If they seem too gooey to be done, don't worry. They firm up at room temperature. Pretty neat! (Hey, I never knew all this technical stuff!) Glob? Did I say "glob"? I meant "batter". See, I'm picking up on the cooking lingo already. I can maybe get addicted to this baking thing.
