"I made a few changes to the recipe and it turned out better. For the crust I used 1 package graham crackers (1 1/4 cups approx), 4 tbls melted butter, 3 tbls brown sugar (light or dark). Pulse crackers and sugar in food processor then add butter. Line 8x8 pan with foil (to make taking out easy). Press crumb mixture in and bake 325 degrees for 18-20 min. For the batter, use 1/2 cup lime (or lemon) juice, and add 1 egg and add the rest of the ingrediants. If you want you can double the zest but make sure you dice it fine with a knife. If you want you can add 1/2 to 3/4 cup of the sweetened coconut to the batter itself rather than on top. Also you can add 1/2 cup or so of white chocolate chips to the batter. Bake 20 minutes until set. cool 1.5 hours and then put it in fridge for at least 2-3 hours. I did the lemon version and it turned out great. Crust was solid but melted in your mouth."
