Chicken Fajita Salad Wraps
These were so easy and so good! Perfect for a hot summer night when you don't want to turn on the oven or stand over the stove.
I made a couple of changes:
1/2 cup ranch dressing
Juice from 1 whole lime
1/2 Tbs. chipotle in adobo (they're in the Hispanic Foods aisle in most grocery stores, for those who had trouble finding them)
2 Tbs. chopped cilantro (add to dressing)
11 oz. can Green Giant southwestern style corn (instead of fresh steamers niblets)
Plus, we only mixed in the dressing to the amount of filling we planned to use, then stored the rest separately in the fridge. This helped keep the filling from wilting and getting soggy during storage.
