Gluten Free Ginger Rice Crunch
"Someone told me I could box this up and sell it. Haha. It's such a yummy little snack to have on the side at a cocktail party or holiday get together. I used ginger and cranberries. I would love to try it with cardamom next time. I accidentally included the cranberries during the cooking process, but it turned out fine. After it cooled, it still seemed like it was missing something. So I added more cranberries. I'll add more coconut next time too. Super yummy!"

Ham and Swiss Brunch Bake
"One word - YUM! I was nervous about this turning into a mushy mess at a brunch I was hosting for some girlfriends. The friend I was honoring at the brunch hates swiss cheese, so I opted for gruyere instead. I ended up doubling the topping recipe because the existing amount didn't even cover half the casserole. I don't know if that was the intent, but doubling the topping was a total winner. It crisped up amazingly well and had a fantastic crunch to balance the soggier bread that had been sitting in the egg bath. Everyone loved it and some people asked for the recipe. I will definitely make it again."

Mocha Streusel Coffee Cake
"I don't know if I overmixed the batter or what - but my cake was overly dry and dense. Almost unbearably dry. It was like eating a mouthful of flour...minus the streusel part. I took the advice of another reviewer and added a mocha drizzle over the top. It needed every ounce of moisture it get get! It looked beautiful though...so that was a plus! I followed the recipe to a 't' so it's a mystery to me why it turned out the way it did. I wish I could give it more spoons...but it did not turn out as expected."

Premium Tres Leches Cake

I have made these a few times now - so quick and simple. Everyone loves them. Even my friend who hates coconut asked me to make them a second time. It's the first recipe with coconut she has ever liked - that has to count for something! So so so yummy!

Slow Cooker Butternut Squash Soup

This soup was a huge hit at last year's Thanksgiving. Even one guest who hates pumpkins and squash loved this soup - he still requests it from me! Since peeling the butternut squash is a huge pain, I only make this when I'm really having a craving. The soup doesn't really make that much - 6 people got a medium sized bowl and it was almost gone. If you want more than that, I would double the recipe. I've found that dumping room temperature cream cheese into the food processor during the blending stage results in a perfectly blended soup every time. Also, I agree to decreasing the pepper a bit from an earlier piece of advice. Enjoy!!
