Pumpkin Ring Cake
I made this cake for my roommate to take to her parents for the Thanksgiving holiday and everyone loved it! I wasn't pleased with how thin my white chocolate chip icing turned out, so next time I will use my cinnamon roll icing. All in all it was a lovely pumpkin treat even for those that don't like pumpkin pie!

Jamaican Jerk Chicken
This one turned out so-so for me. I used chicken thighs and made sure to puncture the meat for better flavor. They smelled great when they were on the grill, but weren''t as great when they were eaten. I cooked them for my boyfriend''s car club, and although they got eaten, the boys weren''t all that impressed. I''m not sure I''d try it again.

Raspberry-White Chocolate Muffins
I have made these muffins twice and both times everyone has loved them. My family is partial to blackberries, so I used those and they were delicious! The batter itself is really great and the muffins come out light and fluffy. This recipe is a keeper!

Raspberry Thumbprint Cookies
I made these this weekend and everyone who had them loved them! In fact, my roommate ate about 3 dozen in one day. I skipped the white choc chip glaze because they seemed sweet enough with the Strawberry Jam I used. My cookies turned out flat too, but I will try some of the suggestions from the others when I make them again. All in all they are delicious!

Baked Steak Burritos
I took the advice given by the others, and allowed my tri tip to marinate in a little bit of olive oil and the taco seasoning for a few hours before I grilled it. My meat turned out really tender and tasty and my boyfriend loved the meal. This was easy and quick and will be in my meal rotation for sure!

Layered Peanut Butter Bars
I made these bars last weekend and they turned out really well. I ended up slightly over cooking the crust layer but made up for it with the creamy peanut butter layer. I had concerns that the chocolate chips wouldn''t melt evenly, but they did and everybody loved them! They are delicious, easy to make and easy to share!

Smothered Chicken and Gravy
I decided to use boneless skinless chicken breasts in this recipe and my boyfriend and roommate loved it! I added some onion powder and poultry seasoning to the salt and pepper for extra flavor and wasn''t disappointed. The chicken was amazingly tender and the gravy thickened really well. According to my family, this one''s a keeper!
