"I almost always make "Dump Cake" when I'm asked to bring a dessert, however, my original recipe suggests topping the fruit with dry cake mix, then covering that with thin slices of butter. I tried the Betty Crocker version (melted butter) and it's a winner! Easier, faster, less butter, yet tastes just as yummy!"

Chocolate Glazed Chocolate Cake
"Baked this for a dinner party for some chocolate-lovin' friends (myself included), and expected it to be almost garishly chocolate-y. I stand corrected. It was the perfect combination of chocolates, and oh so delish. I'll make it again and again and again! I did omit the glaze recipe and, instead, melted some Betty Crocker chocolate frosting and drizzled it over the top. Added some chocolate curls, too ;)"

Coconut-Carrot Cake
"I brought this to a potluck, where someone sliced it prior to putting it out. I was a bit disappointed, as probably 1/4 of it fell into a pile of crumbs. It was easy though, and looked nice before slicing ;)"

It was good, and definitely easy. I used Mexican style veggies, which included a couple of different bean types, so I omitted the black beans. Also topped it with Santa Fe Style crunchy tortilla strips, which added more flavor than plain ol' tortillas would have.

It was divine! Will make it many, many more times! BUT, even with hot sausage and the red pepper flakes, it really wasn't too spicy. Note to self: add more crushed red pepper flakes next time :)
