Grilled Mediterranean Tuna Steaks
This is really wonderful! Even though tuna is typically left pink in the middle I cooked mine all the way. It wasn't dry at all! The tomato relish on top was awesome, I used fresh oregano as that is what I found at the market. I think that relish would be wonderful on chicken or even as a side salad if you left the tomatoes in larger chunks. I already want to make this again very soon!

Black Forest Muffin Cakes
These were really very good, quite moist. I did have trouble with them sticking to the cupcake papers so the next time I'll either spray the papers or just skip them and spray the muffin pans. They're the perfect little chocolate treat.

Impossibly Easy Roasted Peppers and Feta Cheese Pie
We love this pie! I always make it with skim milk and reduced fat Bisquick and still have no problems. When my husband cooks, to help him out, I buy the REAL bacon bits and substitute them. It''s just hard to mess it up!

Apple, Bacon and Cheddar Bread Pudding
I like to make a "strata-like" dish for Christmas breakfast because I can put it together ahead of time and bake it while we open our gifts...this is wondeful and tasty! Even the combination of flavors says fall/winter holiday to me! It''s even good the next day.
