Delicious and easy! For those who do not eat meat, using a vegetarian smoked sausage an hour or so before done worked out well for me. I think using more shrimp and no sausage would be good too. I did add more of each vegetable (used a little bit of fresh sweet red pepper too) as someone had suggested. I will definitely make this again. Using the hint about using a molded mound of rice in the center of the bowl and adding the jambalaya around it was a wonderful way to present and serve. This would make a great company dish, but it's easy enough for great everyday meals too.
