Boston Cream Pie
"This was sooo good! I did cheat by using a cake mix for the cake part, just didn't use all of it for each layer, so that it was the right size for a BCP. BUT, the cream filling was excellent and so easy to make. The chocolate glaze came out very thick and hardened to a crust in the fridge, but it tasted like fudge and was so chocolatey. I will make this again and my husband wants it in 3 weeks! I will make the glaze even thinner by adding more hot water and I don't need to make quite as much glaze if it's going to be thinner. The recipe made a thick portion of the chocolate on top."

Chicken Breasts with Creamy Mushroom Gravy
"This was a very good recipe. I forgot to cook the Bisquik and had to add it after I added the broth, so had to really stir w a whisk to get it incorporated, but it came out fine. I doubled the amount of milk to make a lot of gravy and we served the gravy over a baked potato and over the chicken too. My picky husband loved it!"

Blueberry Best Coffee Cake
"This was so easy to make and my husband and I both loved it! I used almond extract in the glaze as I read that it was good (instead of the vanilla). I thought it was fine as is but may try adding vanilla to the cake. Don't even need to get out a mixer! I used cold butter in the topping and cut it w knives, wasn't sure how it would work w softened butter. Also, recipe said to use shortening, so I used crisco, but it was in a big chunk, so I microwaved it a Little and mixed it in good since it had softened and partially melted."

It took FOREVER to camelize, like a half hour of constant stirring, so that was not fun. Then when I added the milk and powdered sugar, it got grainy and there were pieces of hard sugar in it. I kept whipping and whipping it w my stand mixer and would have thrown it out except that company was coming and I was out of sugar to make more....so put it on. It's super thick and couldn't spread it on the whole cake as it was pulling up the top of the cake. I disguised this by shaving chocolate all over it. Everyone loved it but I would never make the frosting again. What a pain!"

Applesauce Spice Cake

My husband and I loved this cake. I did not add raisins as we are not fans, but it is so good. Took to work and everyone raved about it. Very moist and easy to make. I just used a hand mixer.

Creamy Southwestern Corn Chowder

This soup was great and so easy. My husband grilled some shrimp and we cut them up and added them. We also steeped the shrimp shells in the broth for 15 minutes and that gave it a good flavor. Will definitely make again and double the recipe.

Streusel-Topped Blueberry Muffins
Rating:
These muffins are so good and easy. No mixer needed, just fold together with a spatula. They are not very sweet but my husband and I loved them! The streusel is very good on top.
