Slow-Cooker Thai Chicken
My husband raved about this dish and my teenage boys licked their plates clean! I made this using boneless skinless thighs, low sodium salsa, Simply Jif peanut butter, and a dash of lower sodium soy sauce as substitutions. I added some fresh garlic to the sauce. Not only was it delicious and extremely easy to make, it was also very good nutritionally. Change to boneless skinless breasts for an exceptionally healthy main dish. We'll have this again soon!
