"Some fool once said that dumplings were difficult to make. I started making the Bisquick edition at age 10 (50+ years ago) and I've yet to have a failure. Ten minutes simmer - not boil w/o the cover and 10 minutes with the cover - NO PEEKING. Test with a toothpick (should come out clean) and eat. A tiny bit less milk, perhaps less 1 TBS per cup makes a firmer, dryer dumpling. Add a pinch or two of dry herbs if you like. If your dumplings are large, try 11 minutes before testing. Thanks Betty! "This is an old standard favorite, but Betty has goofed it up a bit. Skip the candies ginger - difficult to find, expensive and just the wrong flavor here. If you want a little spike, use a LITTLE bit if fresh ginger - to taste. Use HALF the sugar, at leastuntil it is finished and tasted. If any thinner is necessary, use frozen OJ concentrate - UNdiluted. Make is several days in adcance and store in the fridge. Stir everyday and taste. If, after two days, you still need more sugar, go for it. A bit on the sour side is intentional for this combination. "
