"Made this for dinner last night. I didn't have any rice vinegar but did have sushi vinegar, which is rice vinegar with sugar and salt already added. I left out the sugar and salt since the vinegar I used contained them. I used citrus and cilantro grape seed oil instead of canola oil. Those were the only substitutes. Added grilled chicken breast. Absolutely delicious! Loved the crunch factor of all the ingredients. I have a container of leftovers for lunch and am curious to see how well it all held up overnight. I think grilled shrimp would be excellent in this too."

"Made this salad last night. I substitued turkey pepperoni for the genoa salami, feta cheese for the parmesan and added some fresh dried oregano to the dressing. Did not have any olives but didn't really miss them. This was the perfect dinner for a hot summer night! "
