"I thought this was a great recipe. My husband and I are very health conscious. We exercise regularly and usually "watch what we eat". But, we are both sports phanatics and Sunday is for "football food" and this was perfect! Varying the cheeses and the chips, this can be different every time you make it. For what it's worth, here's my two cents on the negative comments. Deprevation is not healthy especially when it comes to kids. Any parent knows that they usually want what they are told they can't have. Teaching them how to make good food choices, but also how to smartly fit this type of treat into their eating lifestyle is. "I've been making something similar to this for years. I'ts one of my family's favorite quick meals. I use mexicorn and add smoked turkey sausage or turkey kielbasa and chopped jalapeno peppers. When I don't have fresh ripe tomatoes, I use canned and drain them well. Delicious!"
