Dalmatian Cupcakes
"After reading other reviews where bakers found a problem with the cream cheese mixture setting at the top of the cupcake, I tried to experiment- I thought I would bake a few as directed then try the other method of placing the filling mid-way between layers of batter. I used 1/3 Less Fat cream cheese (the only kind I had on hand) and tried a half-tray of cupcakes baked as directed in the recipe. I watched in the oven window as the batter baked up and surrounded the cream cheese mixture. It worked fine, so I baked the rest of the batch the same way. The white filling sank almost all the way to the bottom of the cupcake, just like in the picture, which was fine with me. I think the low fat cream cheese is the trick here, and even adding a bit of flour next time might help to center the filling - but it tastes GREAT as is. I would make this again - used the fluffy frosting and it was delicious."

Chocolate Cupcakes with White Truffle Frosting
"I made these cupcakes to take to work - everyone loved them. I used all ingredients as stated in the recipe, including the same type of frosting listed. I was careful when mixing the frosting into the white chocolate. At first I thought it was going to lump, but I kept whisking and it came out nice and rich and thick. It is a heavier frosting, but I liked it and will make it again. I spread it on - went on easily. Next time I might try using a large decorator tip as shown. Delicious."

Strawberry-Rhubarb Upside-Down Cake
"This is a delicious recipe. It is a bit tricky flipping over the cake pan when it is warm, but I did it! The fruit looks cooked, as it is, not fresh, so it lost some of the red color. It is very moist. This will not last long in my house!"

Key West Cupcakes
"These are SOOOOOOO delicious. My only problem was that I made them to take to work (frosted them in the morning after making the cupcakes and the fronstings the night before) and by the time I got to work some of the frosting had slipped off. No matter, they are delicious. I made the recipe just as described, but next time I might try to cut some calories and fat by experimenting with cool whip. I used the bottled Key Lime juice and it worked very well - just enough lime flavor. People loved them."
