"Awesome flavor and easy to make! I used 2 cans of Rotel tomatoes, half an onion and minced garlic with a dash of baslamic vinegar and for the oil I used Coconut Oil. It was a little on the spicy side because of the Rotel but the white rice was good for taking off the burn of the Rotel. I didn't have Planko bread crumbs but I had Shake and Bake which I shook the Parmesean Cheese into to coat the chicken. After browning it in the saute pan with the Coconut Oil I put it in a dish covered with foil at 350 degrees while I finished the side dishes. The chicken was so moist it was falling apart. I think next time I will leave the chicken uncovered in the oven instead of using the foil, it would stay crispier. My husband loved the entire dinner and my teenager liked the chicken but not the rice (her rice was plain white rice). A nice Lambrusco red wine accompanied the dish for the adults and for dessert we had warm chocolate pudding made on the stove. Warm chocolate always settles your dinner nicely. Yummy!"
