Mini Key Lime Cupcakes
2-3 bite yummy snacks when made as directed. Easy if you don't forget to pick up cream! Using an ice cream scoop for the batter we ended up with 24 mini's and 12 smallish regular cupcakes which were filled with the extra pudding mix. We nixed the icing since we didn't have any and they were still delicious.

Gluten Free Carrot Cake
Made it for a New Years Party, double layer for show. It was a Hit! No one knew it was GF but me, no weird flavor, even my husband who can always root out GF flavor/smell on everything else did not know. The GF mixes are wonderful. It was the slightest bit dry, but I split the recipe into two 9 inch rounds instead of a single layer cake so it baked faster.

Impossibly Easy Grasshopper Cheesecake
This was impossibly easy and the family loved it. The mint flavor was good but not overpowering and mini semi-sweet chips are the perfect complement to the mint. If you like Mint Chocolate Chip ice cream you'll LOVE this Cheesecake. I love that it was crustless so I can use my pretty pie plate and very easy to make with the blender. I forgot the chocolate chips until after I'd poured it in the pie plate and just folded them into the top, no problem, phew! The hard part was keeping the boys out of it until it was fully cooled! I ate everything but the brown part of the crust which tasted more of pancakes than mint or cheesecake, but no one else complained. WHEN I make it again I will add a bit more Cream de Menthe' and use a 1+1/2 recipe to fill my 10inch pie plate, possibly a 1cup to 3/4cup on the sugar:bisquick ratio instead of 1:1. Still, it was delicious and so much easier than traditional cheesecake!
