S'more Shortcake Pops
To help with the melted chocolate: heat either an electric skillet or, a skillet on the stove to the lowest heat, put in an old dishrag or hand towel in the bottom. Then keep your bowl of melted chocolate on the towel, it will stay a good consistency until you finish dipping. Stir after you dip a few. Make sure the chocolate doesn't get to hot when melting and as it sits on the skillet. It will get clumpy (and ruined),if it gets over heated. It will be thick if it gets too cool. Coconut oil is the best heat tolerant oil and has a mild flavor.....if you don't like the taste use a light olive oil.
I made this recipe gluten, wheat, soy, corn free. It was awesome with my GF flour mix, homemade marshmallows and homemade grahams. Homemade & healthy is always the best idea.
