Gluten-Free Cinnamon and Toasted Pecan Crusted Sweet Potato Cake
I'm making this again! I've was diagnosed with Celiac Disease 5 years ago and this was my first attempt at any bread or muffins that are gluten-free. I read the reviews thoroughly so I had the chance for the best success. And, I made it as muffins. Love it!

Gluten-Free Zucchini-Devil's Food Snack Cake
I changed up this recipe using some of the helpful hints from others I've picked up from a couple of different recipes. I used the yellow cake mix, added a can of drained crushed pineapple. I also used 3 cupes of shredded zucchini. We all loved it! Next time, I will add a little of the juice from the pineapple as I think that will help and make it a little sweeter, too.
