Mexican Beef- and Bean-Stuffed Peppers
Ours tasted a little too much like the tomato puree and beans rather than the spices or other ingredients -- this left it (as someone stated below) tasting a little too "pasty". For us, the concept was better than the taste, unfortunately. If I were to try it again, I would use a little less tomato puree, more meat, and perhaps a taco seasoning.

Buffalo Chicken and Potatoes
My family really loved this dish. I used Lori1099's advice with the Ritz crackers and that worked wonderfully. Also, I used shredded hashbrowns rather than southern style hashbrowns (that just sounded tastier to me), and it was really good. This dish will be a new regular on our dinner table.
