"I've been making this for many years also. I had to make it in two large baking pans, since we fed our 6 PLUS all the neighbor kids too. Kids are all grown and gone so since my husband is now diabetic , we make it with Ground Turkey. I like to add some mixed vegetables or a few cut up potatoes to ours."

"JUST today made this for brunch! Didn't have spinich so we ommited it, didn't have flour so we substituted that for Bisquick. This was a wonderful meal! Very filling and delish :o)"

"We made 2 of these pies last week. In order for it to be more diabetic friendly for my husband, I substituted the sugar for Splenda, regular milk for Smart Balance Milk and Smart Balance butter. One pie I made Pumpkin, the second pie I used fresh sweet potatoes. I boiled, peeled and then mashed them with a small amount of Smart Balance butter. I used the empty pumpkin can to measue the amount. Both pies came out absolutely wonderful! I especially liked the no pie crust part."
