"I actually make this cake a couple times a year and it is always a hit, especially with people who have never seen a homemade version. You'll get a lot of 'how did you do that?' The first time it was a little difficult to figure out, but I didn't have a jellyroll pan at the time. The next time I went out and bought one and it made it so much easier. All in all this is a very good recipe and if you make it once, people are going to ask you to make it again. . .if you don't want to use coffee for the cream in the middle, you can use 1tsp of vanilla, strawberry, or rum extract for a little different flavor. "

"The best gingerbread I have ever eaten! The cardamom is definitely the ingredient that made these cookies. I had some problems with the dough because if the weather and ended up adding more flour to the dough and had to wait longer for them to set, but they were worth the wait. "

This has become one of my favorite go-to recipes! I've made it with the apple, cherry, and blueberry filling and they were all excellent. The thing i love about the bars is that they are just as good hot or cold. . . A little tip, if you are using a more tart fruit filling like the cherry either add a 1/2 tsp of cinnamon to the cheesecake or a little more to the fruit. It helps cut the flavor a little bit.
