Bread Machine Pumpkin Spice Quick Bread
I have to say that I'm disappointed in the bread. Aside from a few alterations in the spices themselves the only thing I did differently was add a tsp of baking soda as many of you suggestion, I followed the rest of the ingredients exactly. I also was confused on the baking time so I just put it at my "fast bake" setting which runs for 1 hour. I don't know that I should say it didn't rise because the center was very high but all around the loaf itself was probably only 2" high, even with the baking powder with the extra baking soda. As well as it being small, the crust was burnt! I also agree with someone else who said it's a little bland, I wish I had added more spices.
I may try this recipe again on the regular setting, however, as it is, it was quite disappointing to me.
