Gluten Free Pumpkin Chocolate Chip Cookies
"Our family LOVES these. The perfect easy Fall time treat. They are just as moist and cake-y as the regular kind. Gluten free baking always needs longer bake time than regular recipes. I baked mine for 14 min at high altitude. The after-taste of most gluten-free recipes is from the starchy flour. Recipes made with bean flour don't have that problem, but I love the Gluten Free mixes that make this fast and convenient to make with the kids and when we want an easy treat. I will try sifting the mix and using Butterscotch chips (Hershey brand is Gluten Free)! Thank you Better Crocker for giving us an old favorite we an eat!"

Linzer Cookie Tarts
"The easiest Linzer recipe I've found. Had some trouble getting the center shapes to hold when baked, but found that if center shapes are cut when cookies are first taken out of the oven then the designs come out very well. They were very crispy but softened when the jam was added. Do not keep leftover dough in fridge, the dough went bad very quickly. Bake them all at once or in the same day. Did not do the chocolate drizzle. Best eaten same day."

No-Roll Sugar Cookies

We did not like these, these got thrown away. Of the 5 sugar cookie recipes this was the worst. The oil is too much with the butter already in it. Made them greasy on fingers and greasy in tummies.

Muffin Glory Cake

Used Gluten Free yellow cake mix instead of muffin mix and it turned out great. Just added cinnamon to the mix. Timed for 40 min and it came out very dark brown, thought I had burned it, but GF mixes need longer cook times, and with the moisture of the fruit it needed more time to bake, also. If I had baked it for any less time it would have been too doughy and under done. Didn't do the strussel, just the drizzle and it was enough sweetness like others have said. Yummy.

Hazelnut Crinkles

I liked the simple recipe for Hazelnut-flavor without the expense and work hazelnut recipes usually are, but these were sickeningly sweet (and we like rich-tasting recipes.) I do not recommend rolling them in sugar. I made them without the sugar and it was still too much. They are not puffy like in the picture, either. You must take them out of the oven at precisely the right time or the sweetness of the Nutella spread will harden and make them too crunchy, so do a test cookie or two to get it just right before committing the whole batch. It was a good concept, though, using the Nutella and I hope BC comes up with a few more recipes that use it!

Mexican Hot Chocolate Cookies

I made these using the Gluten-Free yellow cake mix as a base. I didn't have any mexican hot chocolate on hand so I tried the suggestion from another reviewer to use 8Tbs cocoa and it worked very well. I added 1/4tsp nutmeg and cinnamon, and a pinch of cipotle chillie powder. I had to add a little water when I added the butter/cocoa mix to the cake mix. Definitely don't skip rolling the dough in the sugar as it balances the richness of the chocolate. The cookies did not flatten as they cooked, which isn't a big deal, and they were a little crumbly made this way. I think I will use only 6Tbs cocoa next time. Still, they were deliciouse and the whole family raved! The kids asked if we can make these for Santa this year and we said absolutley!
