Beef and Bean Taco Casserole
Extremely easy and a hit with the family. I did modify the original recipe slightly. I used Black Beans, in place of Refried Beans. I left off the bell pepper. I used 1 can of Rotel tomatoes with 1/4 of the Salsa. I added fresh cilantro into the lettuce tomato mix. Then I topped off each serving with sliced avocado and side dollop of sour cream. The tortillas were crunchy like a nacho. I did not have the soggy issue others mentioned in previous reviews. My family wants this to be a weekly meal.
