"The concept was great, but this one didn''t work. Chicken was fine, but blah. There was so much liquid in this that to "reduce" to almost gone caused the spinach to be way overcooked. I used freshly ground nutmeg and this was too strong. So, in this case, I would modify the recipe so much that it would be unrecognizable, except for using spinach and chicken breasts."

"This is a great dish that is quite simple to prepare. I used a homemade balsamic vinaigrette dressing and some chipolte salt-free seasoning blend as well as italian seasoning. The roma tomato and feta cheese added at the end made it great. I served this with lightly steamed fresh baby spinach leaves with some fines herbes and garlic mashed potatoes. A Chenin Blanc was a good complement."

"This was really great. It almost cooks faster than the fettucini with minimal prep. Just be sure your fettucini is stirred enough to not stick together at the ends! The grated Asiago and Parmessan Regiano make it very "creamy" and smooth. The use of Italian parley is essential. I served it with a green salad, Ciabata garlic bread and 2002 Buena Vista Cabernet Sangiovese. It was excellent."
