Pineapple Icebox Cake Had this for my niece's birthday tonight. Everyone thought it was delicious and it does make a nice, light tasting, cool summer dessert. Mine stayed formed after removing the springform pan, but begin to fall apart as we cut it leaving the leftovers in a messy pile. I think I might use pineapple tidbits and put in a trifle bowl next time. BTW, I used the pineapple in heavy syrup as I think it generally has more taste than the in 100% juice kind.
