I've made these for years. Always, always the first thing to disappear from the appetizer table. Always have to give the recipe. When I married my chef-y husband, he was skeptical, but he loved them, too. A touch of cayenne will give the crust more of a cheese straw quality, and a dash of 'wooster' sauce (the barest dash) can enrich the flavor as well. Don't use mushrooms! Too wet, too musky. You need the piquant and briny saltiness of the olives to complement the crust!
