Southwest Chicken Skillet
This was a very simple recipe that tasted great! I used fresh veggies rather than frozen, substituted celery for onion, omitted mushrooms (my kids don't like them) and since fresh corn is in season, I cut up an ear of that and added it in (ended up being about a cup of corn). I also sauteed the chicken in some fresh garlic and fresh celery leaf which gave it a very yummy flavor. Like others, I opted for chips instead of the tortilla. Also, due to milk allergies, I didn't use cheese but it still was very flavorful. Definitely a keeper!
