Wild West Sizzlin' Chicken Tacos
We had these last night for our May 5th Mexican dining celebration, and I called them green-go tacos. They were so fantastic that after one bite my daughter said it was a "do again" recipe. It didn't hurt that we have the BC calendar hanging in our kitchen, and this is the featured recipe (with picture) for May. I actually was able to make six normal size tacos instead of the recommended four. The only other change I made was that I didn't have chicken strips, so I had to actually cook some breast meat (seasoning while it cooked), and then strip them myself. Either way, this recipe was not extremely time consuming, and the result was amazing!

Fluffy Pink Lemonade Dessert with Pretzel Crust
This was a HUGE hit Easter Sunday! I used sugar free pudding, reduced fat cream cheese and low fat whipped topping, and NOBODY could tell. I did have issues with the cream cheese not getting fluffy, and it remained a little clumpy, but no one noticed. This may have been because of using a low fat cream cheese. This was perfect for our the Spring/Summer weather it was refreshing both b/c of temperature as well as that lemony goodness that is always a treat when its warm outside. This recipe was easy to make and easier to eat. I will be keeping this one and making it again.
