Veggie Filled Sloppy Joes
These were awesome, you would never know it was packed full of veggies!!! My husband and 2-yr old gobbled them up!

Delicious! What a nice twist on overnight french toast/strata. Plenty sweet with the coconut milk and pineapple preserves, you don't have to add any extra syrup or toppings to it after it's cooked. My husband loves pineapple and loved this!

Mexican Pasta Shells
What a great meatless meal! They taste kind of like a burrito or enchilada, but then has a nice twist being made with the pasta shells! I agree with the other review that says to double the recipe... I made the whole recipe and it fed 2 people with a couple shells left over.

Creamy Quinoa Primavera
I just have to say... I think quinoa must be an acquired taste and I just have not acquired it yet. I kept tasting it and adding things, more cream cheese, more parmesan... nothing to me made it taste as delectable as everyone elses review says. My husband said it was okay...

Made these for a superbowl party. They were inhaled by our guests. I am not good at measuring and just kind of throw things together, so I may have added a bit more seasoning then the recipe called for so they didn't turn out bland at all. We paired them with a spicy marinara which was delicious! We will definately make these again, they were so easy to throw together!

Pineapple-Topped Sweet Potatoes
My husband loves baked sweet potatoes, but always covers them in butter and brown sugar. This was a great healthy alternative with just as much sweetness and flavor! He loved them!
