Gluten-Free Impossibly Easy Chicken and Broccoli Pie
Took a road trip to the U.S.ofA. yesterday and I finally got my hands on some G.F. Bisquick after reading about it in magazines for months!
It was wonderful to be able to make and serve this as part of our brunch menu for my celiac daughter-in-law and her family.
Thanks Betty Crocker but please, bring your G.F. line of products to Canada!

Gluten-Free Pumpkin Chocolate Chip Cookies
So yummy! Fun to quickly whip up a batch to take over to my dear daughter-in-law who is expecting our twin grandcherubs. Adding the pumpkin and raisin and/or nuts to your easy mix ingredients give her celiac body more nutrition. I found it necessary to press them with a fork half way through baking for fear they would stay rounded. I cooked them for 16 minutes. Maybe mine were a bit bigger than 2 tablespoons of dough but I don't think by much. Anyway, I think this recipe is great!

Gluten-Free Carrot Cake
A quick dessert for a last minute dinner invite. My daughter-in-law is expecting twins! She is celiac and my making this fantastic carrot cake for a last minute supper invite was wonderful. We all enjoyed it (even Twin "A" and Twin "B") and it was fun to send the rest of the cake home with them.

Gluten-Free Zucchini-Devil's Food Snack Cake
I made this recipe into cupcakes ~ "Struesal Topped Chocolate Zuchinni Muffins" absolutely to die for ~ easy to take and enjoy without the hassle of cutting a cake. You won't know the difference between regular baked and gluten-free. Thank you.

Gluten-Free Blueberry Corn Muffins
I used skim milk rather than water along with large plump frozen blueberries that we picked last seasion. I left them in the oven for a full 30 minutes to get some browning on top. Other than that ~ no changes ~ and the result was wonderful. It was fun to leave something that is G.F. along with flowers at my son and daughter-in-law's new home on their moving day. Hope your gluten free products come to Canada soon. I picked them up in Pennsylvania while on a road trip with my hubby. I am anxious to try the other G.F. products!
