"Used to do this about once a month at an office I worked at for many years. One person was in charge of the potatoes. Everyone else that wanted to partake would sign up to bring a topping. Chili was a favorite. Chopped tomatoes, Ranch dressing, Chicken ala King, Chicken in Alfredo Sauce, Sausage Gravy and creamed tuna were all offerings at one time or another. It made a great lunch to share with co-workers and fun to come up with toppings."

"I have made a recipe similar to this for over 15 years. It is my daughter's favorite, and one of the first she learned to cook and she is now 21! My version varies according to what I have on hand. I have used a can of regular corn, drained, or creamed corn, or the Mexican style corn blend that has bell peppers. I've added the olives to the pancake batter as well as used them as a topping. Our favorite is scoop of canned or homemade chili along with all the other good toppings! It's a great recipe for camping when everything is prepped before leaving in baggies."
