Ham and Cheese Muffins
Okay, now this isn't ham and cheese muffins, but that's only because I subbed in turkey bacon this time. I made the ham and cheese muffins last week as an easy on the go breakfast. I used ham and cheese and I also sauteed some veggies and added them. Still dry and a little bland.
This week, I subbed turkey bacon and upped the amount of veggies added. I sauteed in butter: half an onion, a bell pepper, 1/2 a medium tomato and the yield of one ear of corn. I made the mix and let it sit, per other reviews. Then I folded in the cheese, bacon and sauteed veggies. By the time I mixed it all in, I would say I had almost and equal amount of batter to add ins. These do need to cook a little longer. They are pretty moist, but I like the flavor immensely. I may even think of adding more veggies next time.

I really enjoyed this recipe, as did the man. I was most enticed by the sauce that went into the recipe. It was good, but I think this dish could use just a little more flavor. I'm trying to figure out just what to do to round out the flavor a bit more. I used a little more salt than the recipe called for, but I used low fat low sodium broth. I might use a little more sherry next time. I was also thinking to add just a touch of garlic or onion-- maybe both or even some sage or thyme or something...really, I just felt like the dish was missing a little something.....but overall very good and pretty quick given how rich and delicious it is. I will make it again.

Baked Apple-Maple Oatmeal
It was easy to make is pretty tasty. It seems a little dry. I think I'm going to try to pair it with vanilla yogurt instead of more soy milk. I'm hoping it reheats well. I made it for breakfast this week.....
