Gluten-Free Broccoli and Squash Medley
I was looking for a new side dish to go with the rest of the Thanksgiving meal -- I tend to make the same things every year, but I'm getting bored with them. I've never been much of a squash fan, so wasn't sure what to expect from this. I love broccoli, though, so was willing to give this a shot. Glad I did, it turned out very well. I like the idea of the orange juice, gave the veggies a nice flavor. I used a bit more juice than the recipe called for, since I didn't have the grated peel, but if I make this again, I would not add the extra. and I would also cut down a bit on the amount of butter. I ended up with a bit too much liquid, though a slotted spoon took care of that. I did not add the pecans, don't like nuts, but really enjoyed the bit of tartness added by the cranberries.
All in all, this was a success, and I would not hesitate to make this again.
