"Made these last night so I would have a quick dinner all ready when I came home from work tonight -- just reheat and eat ! They turned out great -- nice and moist, and very flavorful. I may add a bit of onion to them next time for a bit more flavor, but they're very good just as is. I'll definitely make them again !"

Gluten Free Broccoli and Squash Medley
"I was looking for a new side dish to go with the rest of the Thanksgiving meal -- I tend to make the same things every year, but I'm getting bored with them. I've never been much of a squash fan, so wasn't sure what to expect from this. I love broccoli, though, so was willing to give this a shot. Glad I did, it turned out very well. I like the idea of the orange juice, gave the veggies a nice flavor. I used a bit more juice than the recipe called for, since I didn't have the grated peel, but if I make this again, I would not add the extra. and I would also cut down a bit on the amount of butter. I ended up with a bit too much liquid, though a slotted spoon took care of that. I did not add the pecans, don't like nuts, but really enjoyed the bit of tartness added by the cranberries. All in all, this was a success, and I would not hesitate to make this again."

One-Pan Pumpkin Bread
"I made this yesterday as a dessert after the Thanksgiving meal. It was my first experience with making pumpkin bread, so I wasn't sure what to expect. I did get a bit worried about it spilling over the loaf pan, it made quite a bit of batter, and it seemed to "grow" as it stood in the bowl before I put it in the pan. But my fears were unfounded ! It did make a nice big loaf, but no spillage. I added some extra spices -- nutmeg and ginger in addition to the cinnamon called for. Didn't measure, just eye-balled. I thought about putting a streusel topping on it, but I decided not to add anything else to an already full pan. In the end, I'm glad I didn't put the streusel on -- the cake rose so much, and the sides were pretty steep - it was like a little mountain ! lol that I think the topping would have just fallen off. It turned out great even so -- it went together quickly, easy to do in one bowl, and had a nice texture, not too dense and nicely flavored. The raisins were perfect for this. I was very pleased to get such good results on the first try with this recipe and I'll definitely make it again, maybe try chocolate chips in it next time."

Bow-Tie Pasta with Beef and Tomatoes
"I thought this was just ok. Could have used a bit more flavor. I used chicken and plain diced tomatoes because that's what I had. But I was looking for something different to do with the pepper and onion stir-fry mixture (which I also already had on hand), and this fit the bill. I'll try it again using beef instead of chicken, which should give it a bit more flavor, and I'll use the seasoned tomatoes. I also think a bit of cheese melted on top would be just right for this dish. "
