Thai-Style Coconut Chicken
As I write this my hands are on fire from (mis) - handling a jalapeno, and now I remember why I prefer not to add hot peppers to Thai dishes which can acquire a great 'bite' from garlic, ginger and cracked pepper alone!
Anyway, this dish is fantastic and just the two of polished off nearly the whole pan's worth in one sitting.
I doubled the amount of lime (used zest and juice from a big lime), and cilantro, and tripled the amount of garlic & ginger. I also tossed the chicken pieces in a tsp or so of dried cumin and coriander before sauteeing.
