Light Lemon-Sesame Chicken
Once again this was great. I added some mushrooms, asparagus and pepper with mine, and loved it. Another time, I was feeling like some Thai food and I added Coconut Milk and a little more lemon. Should have added a little more corn starch, but it turned out great.

Stuffed Chicken Breasts with Gouda and Spinach
I took the basics from this recipe and made it my own. I live in a smaller town and do not have access to gouda cheese, so I grabbed Kraft's 5 cheese italian blend instead. Then like some of the other folks I chopped up some garlic, onions and red peppers then sauteed them. (A spicy pepper would have been great also.) It turned out delicious and moist! I had cous cous and steamed broccoli on the side! Healthy and delicious, just what the doctor ordered!

I loved this quick easy little dish. I used fresh peppers for my vegtables and I also used the hard taco shells!! It was great. I had plenty for left overs so the next night I made it into quesadillas! Pretty much the same thing, but a little different spin!!

Pork Chops Cubano with Garlic-Citrus Sauce
This was a pretty tasty dish. The breaded pork was a little bland, but the sauce added the zing that it needed. I also cooked some green beans and peppers and used the sauce to bring the meal all together. I have had better, but overall it was pretty good. I would make it again.

Cheesy Sausage and Egg Bake
This is a great basic breakfast dish. I pretty much only had the eggs, cheese and sausage for the meal and it still came out great. (I even just added wheat flour...just added what I thought was needed, and it still tastes great.) I added the seasoning that we enjoy and bodda bing we are good to go! This is the perfect dish for anyone who needs to go grocery shopping and has eggs and cheese.....
