Ham and Cheese Tortilla Roll-Ups (lighter recipe) I really liked these, and so did my family. I served them on a busy night when I didn't have much time to devote to preparing a big meal, and it turned out great. The recipe was easy to follow, and there was no real cooking other than what little effort it takes to put the Roll-Ups together. They were quite tasty and filling, and they went well with the spinach strawberry salad I whipped up to go with them. I think I might experiment next time I make these and try using fresh spinach leaves instead of sprigs of fresh cilantro. I read some of the other reviews before making them, and I rolled the bottom of the tortilla in (just for my kids) so the corn wouldn't fall out. Turned out that it wasn't really necessary because my husband and I didn't have a problem with the corn falling out of our Roll-Ups.
