Trust me- make these potatoes! I wish Betty Crocker recommended a main dish to serve it with because I am not great at pairing food. Anyway, this dish is SO surprisingly good! My in-laws were very impressed! Very unique twist on a loaded baked potato. Again, I say- just try this recipe! :)

Turkey and Bean Tostadas
Now this is my type of soul food! Quick, easy Mexican-inspired food! I made this recipe exactly as directed and it turned out delicious! I made a big batch of the meat-bean mixture and froze it in portions. I am a little busy today, so I popped a bag out of the freezer and we will have a delicious and healthy dinner tonight! And it is a perk that corn tortillas keep fresh so long without spoiling because I just keep them on hand and have tostadas on demand! :) I highly recommend this recipe!

Pineapple Zucchini Bread
Delicious!!! The batter is so good I wanted to eat it raw! The finished product is amazing too. Very tasty. I took a slice after I baked it, but can't wait to try it again tomorrow after the flavors have a chance to marry. :) Highly recommend!

Candy Cane Cake
BEAUTIFUL and delicious cake!! The recipe is simple and perfect for Christmas parties! Next time I will make more than 3/4 cup of red batter; that amount made a skinny ribbon of red when the cake was baked. Pretty, but not as thick as in the picture. Also, you might want to have the clear vanilla for the frosting because regular, brown vanilla makes the frosting look dingy.

Ground Beef and Twice-Baked Potato Pie
This is a good, easy recipe. My husband loves it. I recommend baking the pie without the cheese until the last few minutes of baking. When I baked the cheese for the entire duration, it ended up crusty, rather than melty. Otherwise, I liked it.
