Ground Beef and Twice-Baked Potato Pie
"Another basic recipe, that turned out great! I tweeked it up a little, for our tastes. To the meatloaf I added garlic, chopped green peppers, and a can of mushrooms chopped up, and some ketchup. Pressed it into an 8 x 8 and a little up the sides, then added the potatoes which were the Betty Crocker butter and herb instant potatoes. I added about a 1/4 cup of sour cream once the potatoes were cooked in the micro. I didn't find this dry at all. I also added the cheese the last 5 minutes. My picky 10 year old, who hates casseroles, ate a 1/4 of it!!! He loved it, as did everyone else! Will make again!"

"This was a great snack mix! It didn't even last 2 days at our house. Very easy, and fast to make. I took my cut off the top and filled a sandwich zip lock bag to take to work. Good thing I did, or I would have gotten nothing!! I will, next time, have my 10 year old sort out the marshmallows for me, and add them at the end with the m&m's. I also added more m&m's and peanuts. This was very good, and a recipe that can be played with!"

"What a comforting desert! I didn't change alot, just, like a reviewer said, to cream the cheese, butter first. Then add the powdered sugar 1 cup at a time, the milk, (or heavy whipping cream), then the coloring and mint flavoring, added extra mint. But I also didn't add the whole 3 cups of powdered sugar. Maybe 2 3/4 cups. Used heavy whipping cream instead of milk, and added a little more than 2 tablespoons. Frosting turned out wonderful! Five stars at our house!! Very easy, also!"

Upside-Down Pizza Bake

This was great!! Whole family loved it, even my oldest who doesn't care for green peppers went back for seconds. The youngest, who snubs his nose at casseroles, loved it! I didn't add olives,but subsituted mushrooms instead. Cooked both meats with garlic,and some oregano, and the veggies. Cut the recipe in half for a 9 inch glass deep pie dish. Also after the meat mixture was put in the pie dish, I sprinkled pizza cheese (Motz) on top before I put the bisquick mixture over it all. Also I added a little bit of sugar in the bisquick mix. When done, added some shredded cheddar on top to melt for about 5 minutes. A very fast and delicious dish! Have to try it! It found it's way into my family's supper recipe box!

Beef with Broccoli

This was Great! I made a few revisions. I cooked the rice with 1 cup of water and 3/4 c. of the beef broth for 9 and a half minutes, covered in the Micro. I dissolved 2 1/2 tablespoons of the cornstarch, with 2 1/2 cups of broth. and,2 1/2 teaspoons of brown sugar, and 3 tablespoons of the low salt soy sauce. Added it straight to the browned beef. Let it thicken, and added a can of mushroom pieces, then the broccoli (a little extra), cooked until the broccoli was tender crisp. Omited the salt. I wanted more sauce to soak into the brown rice. Was a great meal!! My picky 10 year old gobbled it up!! Said this one was a keeper! I love this site, you can give suggestions, and take suggestions! The recipe doesn't have to be exact!! Make it to your tastes! My oldest one also put some orange duck sauce on his, he liked the sweet and salty. Will definatly make this as a quick meal go to!! Fast and easy! If you have time, take a roll of biscuits, cut them into quarters, and fry them. Let them cool a bit and roll them in powdered sugar. A great compliment to the meal! Plus it works as a dessert!

Hamburger Stroganoff Casserole

This was really good!! I normally make it with cream of mushroom soup and beefy mushroom soup, with a can of mushrooms. Then there is no salt needed. But this recipe is easier on the wallet. Add some salt to it, to your taste. I also added chopped onion with the hamburger as I fried it. After the hamb. was fried, I just added the water to the skillet, then the gravy packs and let it thicken while my noodles were getting done. I used 3 packs, but they were only .8 something ounces, with 2 and a little over a half cups of water. Once thickened, I added fresh sliced mushrooms (which were on sale). Threw it all together in casarole, and popped it in the oven. Half an hour later, served with biscuits, and green beans with bacon bits, onions and garlic. Fantastic meal!! Kids loved it!
