Chili with Corn Dumplings
I made this dish last night when I was short on ingredients. The overwhelming response from my family was, "This is GREAT! Make it again sometime."
To stretch it out, I did add a can each of white and red kidney beans, drained. We don't like cilantro, so I didn't use it. The dumplings were just right—tender and flavorful. Plus, the recipe was easy to make and didn't require much babysitting from me. I'll definitely be sharing the recipe with family.

Salsa Chicken Fiesta (lighter recipe)
My family enjoyed this dish. I liked it because it was easy to make, especially with chicken that I had already cooked and seasoned. I'd recommend using mild salsa for this, and possibly adding a bit of cornmeal to the crust for more authentic southwest flavor.
