Gluten Free Lemon Lover's Cupcakes with Lemon Buttercream Frosting These were delicious! I didn't use gluten free as I could not afford that! Why do they have to make good for you so expensive? Anyway, I really liked this easy to make, didnt have to get out the mixer too! I felt like I was back in the 1900's! The icing was very good too. Albeit, I love lemons. So next time I shall add more lemon zest and maybe use a lemon cake mix. All and all this will become the basis for all my cupcakes because I am sure I can modify this to taste cinnamon, blueberry, endless!
