"This cake was really easy to make, and I loved that it didn't require a special pan. Like another reviewer said, my cakes didn't rise very much in the pans, so the train is pretty flat and wide, but it still works. I will say that the 'chill before frosting' and 'crumb coat' steps are NOT optional: I put the cake in the fridge for a few hours after it cooled, and when I went to cut and frost it there were practically zero crumbs. I did a small crumb coat and chilled it again for a few minutes, but there were so few crumbs in the first place that it probably wasn't necessary. My main problem was the cake board. The recipe didn't specify a size, so I got a 13"x19", and that turned out to be too small. It only held the engine and three cars. I recommend either getting a HUGE cake board, or even better, getting several small boards and plating each cake separately. You can still pipe on the track, but having smaller pieces would make it easier to store until serving, and you could arrange the train in any shape you want (straight, curve, etc). This time I put candy in the cars, but next time I might steer a little healthier and do things like fresh and dried fruits and nuts. Strawberries and peaches are great with cake!"
