Pumpkin Cheesecake
"I've made this twice and both times it got eaten very fast & had rave reviews. One of the times I didn't have enough eggs, so only used 3 and it was fine (maybe better). The only thing is it cracked on top both times even though I was very careful not to overbeat it!"

Thai Seared Shrimp with Tomato, Basil and Coconut
"We both liked this dish quite a bit. But, we both would have prefered more heat, even after I added cayenne pepper. It didn't really taste like Thai food, but it was good!"

Slow Cooker African Groundnut Stew with Chicken
"The only change I made were to only use chicken breast. My husband and I thought it was ok. The leftovers have not been touched and we both thought we might have liked it better if we didn't know what was in it. It was very hearty, but not the best flavor."

"I thought it was pretty good though a little bland, even though I seasoned the meat well (I used ground turkey). My husband didn't really like it at all."

Smoked Sausage Casserole with Cheesy Cornbread

I made this for a family that just had a baby and I used broccoli cheddar soup and heart smart bisquick. It was pretty good, but a little heavy for me.

Dulce-Frosted Chipotle Brownies
Rating:
I took these to a work party and the flavor was excellent! I didn't use all of the frosting as it seemed like too much. I also used cayenne pepper instead of chipotle. I could have eaten the whole pan myself they were so good!

I forgot to say that they were also very soft and I used real butter and baked them for exactly 10 minutes each time.
