Pumpkin Waffles with Maple-Apple Syrup
As is these waffles were a little bland. I definitely think they needed more pumpkin and a little more spice. I did not make the syrup. Worth a second try though with more pumpkin!

Pear-Rhubarb Quick Bread
Quite delicious. I added a tsp of ground ginger and I subbed half the oil with unsweetened applesauce and subbed 1 cup of AP flour with Whole wheat to boost nutrition and it came out very tasty!

Very tasty. I subbed half whole wheat flour and subbed half the oil with applesauce. I like the texture and the flavor. Got great reviews around my house!

Double-Chocolate Oatmeal Cookies
I liked the chewy texture, but I didn't think they had that strong of a chocolate flavor. I wasn't looking for a really sweet cookie, so the sugar level was fine for me. I would also try to cream the butter and sugar before adding any wet ingredients in the future, which the directions don't mention to do.

Roasted Red Pepper and Artichoke Dip
Good flavor. I didn't have any parsley, so I added some fresh garlic chives instead. I used the lower fat/calorie options mentioned and my dip was very liquidy. Aside from being harder to "dip" from, pretty good.

Slow-Cooker Green Chile-Chicken Enchilada Casserole
Good dish! I added chopped olives in step 1 in addition to the rest and other lower fat substitutions below, we also omitted the sour cream all together. Very tasty dish. The family enjoyed! Prep work took me quite a while though as I boiled my chicken before shredding it.

Slow-Cooker Upside-Down Chicken Pot Pie
Very tasty, family enjoyed. I used some cream of mushroom soup + water instead gravy, chicken breast, fresh onion and some random spices from the cabinet too. Came out wonderful!
