Bacon Cheddar Bisquick® Pancake Bites
These were delicious. I made them this morning and my family thinks they are awesome. Don't believe the serving size though - it calls for mini-muffin tines and state each is a serving but unless it's for a huge brunch buffet, no one would eat just one. I doubled the recipe and used regular muffin tins. They baked about 25 minutes (just bake until they start to brown on top and pull away from the sides of the tin) and were amazing. My daughters used more syrup on the side but I found them sweet enough with the maple syrup that is used in the batter. I highly recommend a sharp cheddar to balance the sweet syrup.
Definitely one we will repeat!

Slow-Cooker Butternut Squash Soup
I love this recipe. I have now made it at least 5 times (and planning to make it today too). My kids will eat it, I've served it to guests and everyone agrees it's extremely tasty. I use low fat/low sodium chicken broth instead of bouillon/water and I use 6-7oz of "1/3 less fat" cream cheese instead of the 8oz in the recipe. It's very healthy, extremely easy to make and great with a salad or a sandwich. I'm trying to have more meatless meals and this fits the bill. I use a "stick" or immersion blender (under $30 and worth it) which greatly reduces the effort and mess of batching in a blender. I work full-time and this is an easy way to have a hearty meal waiting without fuss at the end of a long day. The squash can be cut and the onion can be sauteed the night before so all I have to do is dump it into the crockpot before leaving for the office. If I'm working from home it's even easier to throw it together at 10am.

Ultimate Chicken Fingers
Quick, easy and both adults and the girls (7-yr old, ultra picky 5-yr old and 1-yr old) loved them. The parmesan adds that flavor that sparks it and they had no idea it was in there. As with most Bisquick recipes I eliminate the salt (or cut in in half)- the extra sodium isn''t needed especially with parmesan and it takes away from the flavor.
