Butternut Squash Cake with Butter-Rum Frosting
I made the cupcake version of this (from the BC big book of cupcakes book) and the cake had great flavor but I didn't care for the texture. It was a little too dry/dense. The frosting was yummy but the rum flavor was slight. B+

Pink Champagne Cupcakes
These cupcakes are AMAZING! I used a dry champagne and baked them for 18 mins at 325 degrees. They were a huge hit with my family and myself. The cake has an incredible texture (the bubbles in the champagne make it sooo unique)and the frosting was perfect and not too sweet. I decorated them with sugar pearls and they are just so elegant looking; perfect for graduations, bridal showers, engagement parties, etc. Thanks for this great recipe!
