"I love to cook and I'm pretty good at it. I mostly cook from scratch, because I live in Mexico, where convenience foods are hard to come by. But thank goodness, I can find Betty Crocker cake mixes, not in all flavors, but atleast the main ones! I love"

"What an awesome carrot cake! Not too dry or crumbly like other carrot cakes that I've tasted. I made this for my mother-in-law's birthday, everyone raved about it. I had to make another one when we got home, because my husband and children wanted more cake! I really liked the simplicity of the cake. Not alot of ingredients and very easy direction to follow."

"This was a soup-er easy recipe to follow. Tasted pretty good, but I added some black pepper and a little more salt. Family loved it. I just served it with garlic bread. Kids didn't complain about the broccoli and never suspected the mashed potatoes. I will be making this recipe again, soon."

What an awesome carrot cake! Not too dry or crumbly like other carrot cakes that I've tasted. I made this for my mother-in-law's birthday, everyone raved about it. I had to make another one when we got home, because my husband and children wanted more cake! I really liked the simplicity of the cake. Not alot of ingredients and very easy direction to follow.

Spicy Peanut Chicken

This is really a tasty dish! I first made this recipe as a newlywed and that was 14 years ago!!! Well, my hubby still loves this dish. The only thing that I've changed, is that I sometimes substitute cashew for the peanuts! DELISH!

Luscious Lemon Squares
Rating:
These lemon squares always come out perfect. From the first time I made them, about 15 years ago, until today. I just finished making a batch. My kids and husband love them. Our aunt has a lemon tree and always gives us lemons, and my kids ALWAYS ask for these lovely squares. They're not too tart nor too sweet. Perfect!!!!

Chocolate-Orange Truffle Cake

Oh my!!! This cake is sinfully delicious! I made it today for Valentine's Day. It tasted divine. Very easy recipe to follow. The only change I made, was that I substituted a dark chocolate candy bar that's flavored with orange extract, for the chocolate chips. It just helped enhance the orange flavor of the cake. If I'm ever in the mood for a guilty pleasure, you can be sure that I'm going to make this cake!!!

Bread Pudding with Whiskey Sauce

I've had this recipe for years and had always wanted to try it, but never actually did until recently. WOW!!! My husband and kids loved it. It's so easy and delicious! I've substituded rum for the bourbon and it's just as good.

Wow! What can I say about these churros? "Muy bueno" is what my husband said and he's Mexican. Enjoy these churros with a cup of Mexican Hot Chocolate and you've got yourself an "authentic" Mexican dessert.

Decadent Pecan Pie

This is THE BEST pecan pie recipe! I've been making it for years. I made it again yesterday and my hubby's family just raved about it! I like to substitute the corn syrup for maple syrup, and it's just as good. Other than that, I wouldn't change a thing. My sister-in-law substitutes the corn syrup for sweetened condensed milk, but it just isn't the same. Thank you Betty for teaching me to cook!!!!

If you like shrimp and Asian cuisine, then you definitely should try this recipe. I was bored with my same old shrimp recipes and happened upon this one. I will be making this dish AGAIN AND AGAIN!
